Itinerary Details

Day One

Upon arrival into Honolulu International Airport, you will be met by your transfer at the airport after baggage and customs/immigration clearance.
Serena will be at the hotel to meet you and ensure that check-in is smooth!
The day is yours to settle in, refresh with your spa voucher and acclimatise to the beautiful Hawaiian pace.

This evening a drink in the bar before our welcome dinner at The Moana Surfrider. Meals Included : Dinner (wine included)

Day Two

Shopping Day – Today we head to the amazing Waikele Outlet Shopping Mall for bargains on all designer clothing & footwear.
Saks 5th Ave, Ralph Lauren, Michael Kors, Tommy Hilfiger, Nike, Guess, Nine West plus many, many more designer labels. You’ll need strong arms to carry out all of your amazing purchases…

The afternoon is yours to relax on the beach or by the pool. Dinner and drinks tonight at Dukes on the beach (optional)

Day Three

After breakfast we will be collected for our Hawaii Food Tour. This is a full day tour to the North Shore and is a showcase of scenic wonders, amazing food (garlic shrimp, genuine Hawaiian food, roadside grinds, decadent and rich pastries, & more!), You’ll even have time for a personal shopping break in a historic coffee and chocolate plantation!

This a full day so drinks and dinner once we return to the hotel is optional.                      Meals Included : Breakfast, Lunch


Day Four

Sunrise Beach Yoga followed by breakfast.

For those who are keen for a rest day, today is perfect to soak up the sunshine, swim or book in for massage, learn to surf or try stand up paddle boarding. If you’re feeling more energetic hit the stores right across the street from our hotel. Sephora, H&M, Kate Spade, plus Luxury Row; Chanel, Louis Vuitton, Gucci…

Tonight we set sail and watch the beautiful sunset over Waikiki Beach for our Sunset Holokai Catamaran Cruise.
Get soaking wet on the nets or kick back and relax on the comfortable main deck. All drinks included on this 1.5 hour tour.

Dinner at a local nearby Taqueria is optional.

Day Five

After breakfast we head out and take our guided tour to the Shangri-La Museum and the Iolani Palace.

One of Hawai‘i’s most architecturally significant houses, Shangri La was a retreat and sanctuary for a woman, Doris Duke, who greatly valued her privacy. In the late 1930s, Doris Duke built her Honolulu home, Shangri La, on five acres overlooking the Pacific Ocean and Diamond Head.
Shangri La incorporates architectural features from the Islamic world and houses Duke’s extensive collection of Islamic art, which she assembled for nearly 60 years.
In her will, Duke set in motion plans to open Shangri La to the public as a place for the study of Islamic art and culture.

Iolani Palace, the official residence of Hawaii’s monarchy, is a marvel of opulence, innovation and political intrigue. Meticulously restored to its former grandeur, this National Historic Landmark in downtown Honolulu tells of a time when their Majesties, King Kalakaua, who built the palace in 1882, and his sister and successor, Queen Liliuokalani, walked its celebrated halls.
We will immerse ourselves in Hawaii’s royal heritage.

Tonight we head to the Skybar as VIP guests. High above the streets of Waikiki we can sip cocktails and unwind from our full day of sightseeing.

Day Six

An early start for our day at glorious Hanauma Bay. Snorkel the pristine waters at one of the most popular natural attractions in the world. You’ll spot schools of colourful fish and perhaps even dolphins and turtles. The safe inner reef is perfect for beginners, while the more challenging outer reef will thrill advanced snorkelers on Hanauma Bay.

We will arrange delicious picnic hampers for lunch and provide all of your snorkelling equipment.

After the bay, we will head back to the hotel to relax by the beach or pool, or you can head to Ala Moana Shopping centre to top up your shopping. It is the largest out door mall in the Northern Hemisphere. So prepare to shop!

Dinner Tonight is a traditional Polynesian Luau at a nearby beachside location. Watch the sunset over Waikiki Beach and shake your hips to the rhythmic sounds of the the traditional island drums.

Day Seven

After breakfast we will head to the Diamond Head State Monument. A short hike to the top of the mountain and you can see all the way across to downtown Honolulu and the beautiful stretch of Waikiki Beach. Stunning views and a great way to start the day.
For those who wish to go to the Farmers Market we can visit on our way back to the hotel.

Once back to the hotel, the remainder of the day is all yours to enjoy. More shopping, more reading, more swimming, more anything……

A farewell drink tonight at The Mai Tai bar on the beach followed by a light dinner (optional) and then it is back to the hotel to pack and confirm departure details for the next days’s checkout.

Hobart Eat and Drinks Diary | Part One


Hobart. It all came about when the annual, all too familiar, family Christmas location discussion came up in July. Who’s hosting?  Where shall we go? My family is from Adelaide, so travel was imminent. However this year we decided to make a real holiday out of the festive season and go somewhere different.

The main requirement was warm weather, a big house on a private or secluded beach and hopefully with a boat ramp. A range of excellent locations were tossed around and then we settled on Hobart. Seems like a weird beach holiday choice, until you research it and discover it has some of Australia’s best bays and beaches, and even though the temperature is lower than our Northern friends, the UV is extraordinarily high…so a mild 22 degree day, is in fact, a scorcher! Nobody tells you this…You’re welcome.


Transport to Hobart is either to fly or to ferry. We decided early that we would take our boat over, so we booked it onto The Spirit Of Tasmania and my better half accompanied the boat on the boat…my brother and family had their car, so he too took the ferry…the rest of us opted for the quicker route and flew. The Spirit leaves Melbourne twice daily and takes approx 12 hrs. Docks into Devonport and then it is a 4 hour drive South to Hobart. The flight takes 1hour 20mins to Hobart direct..enough said.


‘Saltcotes’ is the amazing house we found on Trip Advisor. It is located in Opossum Bay, approximately 40 minutes out of the Hobart CBD. Secluded beach. Tick. Boat Ramp. Tick Tick. And the house…..oh my..It appeared to be a Revenge style Hampton’s home smack bang in the middle of sleepy Tassie. It was perfect. And upon arrival, it did not disappoint. This 5 bedroom, 3 bathroom Cape Cod delight, sits atop a slight rise overlooking the Derwent River and towards Blackmans Bay.


‘Saltcotes’ exceeded all expectations. A beautiful welcome hamper, spacious rooms, clean and well maintained, beach toys including kayaks, big outdoor beanbags, fluffy white towels and upmarket body wash. Its the small things that matter. I must add this place isn’t cheap. So you do expect the finer things, and the hosts Francis and Henry certainly understand that the dollar charged should be worthy the stay. And so far so good.


Planning is key for this type of family vay-cay. As we were heading into town 2 days before Xmas, we preordered all the food. The turkey, chicken, ham and pudding were all ordered in advance from Wursthaus Gourmet Kitchen in Hobart, and ready for pickup on the 23rd. A Coles online order was placed from Adelaide the week prior and the delivery of all the other food staples, arrived as we were settling in on our first night.


Opossum Bay is very sleepy. A general store and that is it. The nearest supermarket is 30 minutes away. So it pays to be organised if possible.


‘Saltcotes’ built in 1936, grandly sits alone on the Northern tip of Opossum Bay. 100m South over a small cluster of rocks is the rest of the beach lined with beach shacks and beach shacks turned into houses all dotting the foreshore. There is mixture of homes and quite an eclectic mix. Yes that is a light house at the front of the boat themed beach shack…and its actually kind of cool.

Phuket | Eat and Drinks Diary | Part One


I am very fortunate that my significant other and I enjoy travelling with my brother and his wife. We annually try to get away on an adults only vacation, usually somewhere hot and beachy, and just relax. And this year is no different.



We decided to try Phuket and originally booked for a week in May…and then realised it was Phukets wettest month, so just as quickly rebooked the flights and moved it forward to April..Phukets hottest month…and with it coincidently being my birthday in April, decided to celebrate in style.






Jetstar had some great deals going so we booked business class tickets and hunted around to find a resort away from the hustle and bustle of Patong Rd, but close enough should we decide to venture in for some interesting nightlife.


The Surin Luxury Beach Resort, is a member of Design Hotels and recognized worldwide as an independant boutique hotel group. The Surin, formally known as Chedi, is a 5 star sophisticated resort designed by Paris based designer Ed Tuttle. And the attention to detail certainly shows. A modern take on quaint beachside cottages, with amenities galore, a clean white beach and palm trees on mass. It is simply paradise.






The hotel lobby and restaurant is set high above the beach and cut into the surrounding hills, so be prepared to walk up lots of steep steps..however the view from the top is breathtaking and that is the reward. Lots of local natural products have been applied to the design fit out. Timbers, granites and white washed thatched roof tiles are keeping the local feel alive.





We arrived late at night and checked into our beach side cottage and fell into an exhausted sleep with the sound of the waves crashing outside. A peaceful start to this island break.

Day One – Breakfast is served high up the restaurant and the food choices available did not disappoint. A range of western style offerings, plus a full asian breakfast, a chef for fresh egg dishes and pancakes and waffles, all hot off the grill. After brekky we decided to explore the resort. A complete hi tech gym, a beach bar, a beach restaurant, plus all of the water sport amenities available, free of charge. So we headed straight to the beach for a morning swim in the turquoise warm water and spent the majority of the day shuffling back and forth from sun lounge to ocean. There are beautiful Thai ladies offering massages and foot scrubs etc, so I took advantage of lying in the sun and enjoying the peaceful surroundings whilst having the best foot massage Ive had in ages. Tough day.





My brother and his wife arrived late in the day and we took advantage of the beach bar for a pre dinner birthday drink and then it was off to the Catch Beach Club at the neighbouring beach.



An upmarket A-la-Carte venue, with a Eurasian style menu, it is hip, cool and very now. A DJ spins modern beats, the clientele is very European, Led lights softly light up feature fire pits, the staff are all dressed in crisp white and blue uniforms…Its a bit Mykonos, a hint California, on a little beach in Thailand. Not a typically authentic Asian start to the holiday, but we still managed to eat too much, drink way too much and all in all have wonderful first night in Phuket.

Plus it was my birthday. Bonus.
